Tuna Melt Throwback

Ingredients

 1 Can Wild Planet Albacore Tuna (in water; no salt added)
 2 Celery stalks, cleaned & diced
 1 tbsp Primal Kitchen Avocado Mayonnaise
 1 Small tomato, sliced
 1 Slice of your favorite cheese, preferably hormone free
 2 Slices of your favorite bread (open face)
 A few springs of parsley to garnish

Instructions

Set oven or toaster oven to broil; as it is heating up, place tuna, celery, and mayo in a large bowl. Mix well to combine.

On a baking sheet with foil, place bread (either at room temperature or slightly warmed/toasted) a few inches apart, then add tuna salad and slice of cheese on top.

Place in the oven for 3-5 minutes - oven temps will vary. Once cheese is starting to melt, and bubble, remove, and add a slice of tomato on top. Place back in the oven and let it cook for 1-2 more minutes. *If you prefer, you can place the tomato on top of tuna, then layer with cheese and have it cook for the entire broiling time.

Garnish with parsley, and serve on a festive plate! Voila!
