Greetings Friday, and March 19th to be exact. Lucky number 19; I have a feeling it is going to be a REALLY good day. Also, I thought it was about damn time to showcase this AMAZING chicken dinner that I prepared, recently, that was inspired by my trip to France (almost 2 years ago) and my longing to hit the ground running with travel again. Simply put, I deemed this a French Inspired Roasted Chicken, and I may have had a little help from an amazing food blogger who is always showcasing nothing less than deliciousness! Also, did you know that today is “National Poultry Day?”

Yes, thank you Elizabeth Lindemann (Bowl of Delicious) for giving me the inspiration to make it an “easy button” dinner, especially when the creativity has been less than, well, creative! Plus, I think your work is AMAZING, and wanted everyone to know that your work is a must to check out!

Not only is this “winner, winner” French Inspired Roasted Chicken dinner a real WINNER, but so is the work of art that it will be cooked in too.

Yes, the recipe calls for the chicken to be cook in a Dutch Oven, and anytime I can pull out my “matte navy” Le Creuset Dutch Oven, I am one happy gal! Uh huh, this baby is like a work of art itself!

And you know what else makes it a standout? Adorning said Dutch Oven with some super fun dish towels from Anthropologie!  Even serving in a fun apron and mitts/pot holder just takes it from amazing to OMG! While the French Inspired Roasted Chicken was delicious, the items that adorned it were just as fabulous! Can you tell I am a sucker for the Anthropologie houseware section? Hope you enjoy and, take my word for it – the chicken dinner was DELICIOUS! So EASY and versatile, plus a perfect weeknight (or weekend) meal to bring warmth, comfort, and family together, even if still over Zoom.

FYI: The fingerling potatoes are optional in this recipe. Feel free to cook the potatoes as I did in the Dutch Oven (I chose tri-color for a little more pizazz and COLOR) or eliminate altogether!

Oh, and wine to pair? A fabulous glass of chardonnay seemed like the best choice but, as I always say, DRINK (and pair) what you like. Did you really think I would say anything other than THAT?
