This cocktail blends 2 LOVERS – lemon infused vodka and Prosecco. It’s funny; I don’t do sweets but I can tolerate this beverage. I was inspired to recreate from my recent trip to Denver. On our last day, we had brunch at what is called “Denver’s Best Diner,” Sam’s #3. In fact, it was showcased on “Diners, Drive-Ins, and Dives” for their infamous green chili. P.S. So good, so good!

As everyone ordered Bloody Mary’s, I went for the “Lemon Bellini;” bubbly, Deep Eddy Lemon, sans peach puree. Who needs the extra sugar? I guess I was a sucker for it because all of their cocktails included Deep Eddy Vodka. When the waiter delivered it to the table, in a pilsner glass (yeah baby), he left it by saying “hey, if you want a mixer, let me know.” “Oh, I am good.” I watched him make it; lots of bubbly and a few shots of Deep Eddy. Who doesn’t love a boozy brunch?

I knew this is something I wanted to create when I returned! In lieu of a pilsner, or a champagne flute for a classic “Bellini,” I opted for these really fun martini glasses that I purchased at HomeGoods! Additionally, I wanted to keep this just as boozy to keep the integrity of the cocktail – 1 part vodka to 1 part Prosecco! Hey, go big or go home, right?

Here is HOW SIMPLE you can make the drink…and how it will be a “crowd” pleaser. Yes, less than a 10 person pleaser.
