Layered Taco Dip

Happy Tuesday, and day before Cinco de Mayo! Whoop whoop! If you are a fan of margaritas, tacos, and any other authentic Mexican cuisine, you get double the fun this week. Yes, “Taco Tuesday” & an excuse to sip margaritas & eat bottomless chips & salsa tomorrow! Remember, food should not be complicated, and you should eat what you like and just enjoy life! This is my wellness hat on right now! In honor of BOTH “Holiday’s,” I am recreating a family favorite that takes me back to my youth. The layered taco dip I am sharing ALWAYS took centerstage at family gatherings and, although we have not had it in awhile, I thought NOW would be the best time to break it out and take a walk down memory lane.

This layered taco dip is a perfect tailgate food or an appetizer to take to a party (or serve at your own party). I may be a bit bias but it is pretty freaking FANTASTIC! I have cleaned it up a bit and made it versatile and customizable to however you see fit! Btw, while I have dairy free sour cream in my case you can absolutely use a regular, organic band such as Organic Valley Sour Cream.

I did adapt a piece of the recipe [the taco base] from one of my favorites – Siete Foods. I even used their fabulous tortilla chips as my accoutrement to the dip. Seriously, if you have not tried, they are an absolute must! For the base, I incorporated their Mild Taco Seasoning and Jalapeno Hot Sauce.

Talk about a quick and easy appetizer that will take your party (or Wednesday evening) from amazing to AH-MAZING!

Layered Taco Dip

Ingredients

For The Base (Adapted from Siete Foods)
 1 Container dairy free sour cream (1 1/2 - 2 cups)
 1 Packet taco seasoning (I used Siete Foods "Mild")
 1 tbsp Jalapeno hot sauce (I used Siete Foods)
For The Layers
 2 Heads of romaine, chopped
 2 Small tomatoes, chopped
 2 Cups good quality cheese, shredded
 Fresh or jarred (make sure it consists of clean juices) jalapeños, sliced
 Sliced black olives

Instructions

Prepare the taco base; mix all ingredients - sour cream, taco seasoning, juice, Worcestershire sauce - in a small bowl.

In an 8x8 dish, spread the base on the bottom (ideally 1/2 inch thick). A round baking sheet covered with foil works just great too!

Layer the romaine, cheese, tomato, and jalapeños, and any other toppings that you want!

Serve with your favorite tortilla chips, and any additional accoutrements you see FIT!
